At this time of year, in Freezingland, food has to fill three criteria to be really satisfying. It has to be comforting, cheap, and easy to cook.

Comforting, because when water freezes in your glass while just looking out the window, you are naturally enclined to go for comfort food.

Cheap, because after the Holidays, you have to go on a budget.

And finally, easy because, again, the Holidays. We all go through so much trouble to make delicious, complicated meals for Christmas and New Years’ Eve. Keeping things simple is a must at the beginning of the year.

On top of that, I’ve been having several pretty bad episodes of heartburn recently. So I was looking for stuff that wouldn’t upset my stomach. Quite a challenge, you might think…

Think again, my dear Lovelies.

This soup has every quality mentionned above. Its only flaw might be its color (most people aren’t really fond of purple food, I know…).

So here’s the recipe. Just so you know, I’ve made it twice the past week, on Chéri’s request. Not only is it comforting, easy and cheap…. It is delicious!

Ingredients needed:

  • 8 cups of chopped red cabbage
  • 1 chopped onion
  • 1 diced potato
  • 2 table spoons of butter
  • 2 bay leaves
  • 5 cups of chicken broth
  • Half a cup of crème fraîche (or 35% cream)

All you need to do is to melt the butter in a pot. Then cook the onions, until tender. Add the cabbage, the potatoes, the broth and bay leaves.

Bring to a boil, and turn down the heat. Put the cover on and let simmer for about 30 minutes (or until the veggies are fully cooked).

Then blend, and add the cream. Season with salt and pepper as you please… And enjoy!
