It used to be anything ‘instant’ – like instant mashed potatoes. I’d add some cheese and if I had ’em some raw veggies and voila! Dinner. Alternatively it was hit the drive thru. Now however, since my innards are staging a coup and it’s not well known what will be tolerated, I’ve gone to Ensure™ which is a protein shake. It staves off any unwanted diabetic issues (like low blood sugar) and it usually stays down. *sigh* It’s tough being a gourmet in a liquid protein shake world. 😭
Tuna pudding: Macaroni pasta, mushroom soup, and a tin of tuna all mixed together when pasta is cooked .Can be given an extra heating up in the mircowave.

Sometimes I cook up a batch of hot bacon dip and we eat it with crackers. Fast, easy, delicious, and the cleanup is minimal.
